In your largest, deepest skillet or seasoned cast-iron pan—choose one with a lid—heat one tablespoon of olive oil over medium heat. Once the oil shimmers, add the sausage meat. Use a sturdy wooden spoon to break it apart into small, rustic chunks. The key here is not just to cook it through, but to render its fat and achieve a proper crisp on the edges. Let it sit undisturbed for minutes at a time to allow caramelization, then stir. You’re looking for deep browning and a texture that offers a slight crunch. This browning creates the fond, the flavorful browned bits, and, more importantly, renders out the Merguez’s signature spiced, garlicky, and slightly smoky fat.

- Build the Sauce Base – The Sweet and Savory Bed To the pan with the Merguez fat, add the remaining olive oil. Increase the heat to medium-high. Add the chopped onion and bell peppers along with a generous pinch of salt. The salt helps draw out their moisture. Sauté, stirring occasionally, for a full 8 to 10 minutes. Using the back of a large spoon, create 6 evenly spaced wells or “nests” in the sauce, pressing down to the bottom of the pan. The wells help contain the eggs.
