Zimbabwean Dovi – Creamy Peanut Butter Stew
- Brown the Chicken – Building the Flavor Foundation Begin by patting your chicken pieces completely dry with paper towels. This is a crucial step for achieving a proper sear rather than a steam. Season the chicken generously on all sides with salt and freshly ground black pepper. In a heavy-bottomed Dutch oven or large pot, heat the vegetable oil over medium-high heat until it shimmers. Carefully add the chicken pieces in a single layer, working in batches if necessary to avoid crowding. Allow them to sear, undisturbed, for 4-5 minutes per side until the skin is deeply golden brown and crisp. This browning isn’t just for color; it’s the Maillard reaction at work, creating a complex savory flavor and fond (the browned bits) on the bottom of the pot that will enrich the entire stew. Remove the browned chicken and set it aside on a plate.
- Build the Aromatic Base – The Savory-Sweet Heart In the same pot, with all the delicious chicken drippings, add the chopped onions. Reduce the heat to medium. Add a pinch of salt to help them sweat. Cook, stirring occasionally, for 6-8 minutes until the onions are soft, translucent, and just beginning to take on a golden hue at the edges. They should be sweet and fragrant. Now, add the minced garlic, dried thyme, and smoked paprika. Stir constantly for about 60 seconds. - Create the Peanut Sauce – The Transformative Moment While the tomato base cooks, prepare the star ingredient. In a separate medium bowl, add the natural peanut butter. If the oil has separated, give it a good stir in the jar first. Gradually add about 2 cups of the room-temperature or slightly warmed chicken broth to the peanut butter, whisking vigorously and continuously. Start with a small amount and whisk until completely smooth before adding more. This patient, gradual incorporation is the absolute key to preventing the peanut butter from seizing into unappetizing, greasy lumps when it hits the hot pot. You will end up with a smooth, pourable, pale beige liquid. Once your tomato base is ready, pour this smooth peanut mixture into the pot, followed by the remaining broth. Bring the pot to the very beginning of a simmer—just a few lazy bubbles breaking the surface. Then, immediately reduce the heat to the lowest setting. Cover the pot with a tight-fitting lid. Let it simmer gently, undisturbed, for 35 to 40 minutes. This low-and-slow cooking is where the magic happens. The chicken becomes fall-off-the-bone tender, the raw flavor of the peanut butter completely cooks out, and the oils from the peanuts emulsify with the broth and tomato base, transforming the thin liquid into a luxuriously creamy, velvety sauce. The stew will darken to a rich, nutty brown.
- Finish with Greens – A Pop of Color & Nutrition After the simmer, the chicken should be perfectly cooked and the sauce thickened. Stir in the fresh spinach or pumpkin leaves by the handful, letting each addition wilt into the hot stew before adding the next. This should take only 2-3 minutes. The greens add a vital fresh flavor, vibrant color, and a nutritional boost. Now, taste the stew thoughtfully. It will likely need another good pinch of salt to make all the flavors sing. The stew should be rich, creamy, deeply savory, and nutty.
