Instructions
- Sauté the Aromatics
Heat oil in a large pan or pot over medium heat. Add the chopped onion, minced garlic, and chopped chili. Sauté for 2-3 minutes. Cook until the onion is soft and translucent. It should smell very fragrant.
- Fry the Vegetables
Add the carrots and sliced bell peppers to the pot. Increase the heat to medium-high. Stir-fry the vegetables for 5-7 minutes. They should become crisp-tender. We want them to keep some crunch. Do not let them become too soft.
- Toast the Spices
Reduce the heat back to medium. Add the curry powder and ground cumin to the vegetables. Stir constantly for about 1 minute. This toasts the spices. It unlocks their full, deep flavor. Be careful not to let them burn.
- Combine and Simmer
Now, add the diced tomatoes and tomato paste. Pour in the entire can of baked beans or white beans. Stir everything together very well. Let the mixture simmer for 5-10 minutes. The tomatoes should break down a little. This creates a savory sauce. Season generously with salt and pepper.
- Serve Your Chakalaka
Your Chakalaka is ready! You can serve it warm or cold. It is fantastic as a side dish right away. It also tastes even better the next day. The flavors have more time to blend.
Ingredients
- 🥕 2 carrots, julienned or coarsely grated
- 🫑 1 green bell pepper, thinly sliced
- 🔴 1 red bell pepper, thinly sliced
- 🧅 1 onion, chopped
- 🍅 2 tomatoes, diced
- 🌶️ 1 small chili, finely chopped (adjust for heat)
- 🧄 2 garlic cloves, minced
- 🌶️ 1 tbsp curry powder
- 🟤 1 tsp ground cumin
- 🫘 1 can (400g) baked beans in tomato sauce OR white beans
- 🥫 3 tbsp tomato paste
- ⚫⚪ Salt and pepper to taste
- 🛢️ Oil for frying (vegetable or sunflower oil works well)
