Instructions
- Cook the Mince
First, preheat your oven to 180°C (350°F). Heat some ghee or oil in a large pan. Add the diced onion and minced garlic. Sauté them until they are soft and fragrant. Now, add the beef mince. Break it up and cook until it browns. Stir in the curry powder and turmeric. Then, add the chutney and chopped dried apricots. Mix everything well.
- Add the Bread
Take your slices of white bread. Soak them in a little milk until soft. Squeeze out all the excess milk from the bread. Add the soft bread pieces to the mince mixture. Knead it all together with a spoon. This makes the filling moist and binds it. Season well with salt and pepper.
- Make the Topping
Take a jug or bowl. Whisk together the 250ml of milk and the two eggs. Add a little salt to this mixture. Pour this creamy topping evenly over the mince layer. Make sure it covers everything.
- Bake to Golden Perfection
Place the dish in your preheated oven. Bake for 35 to 40 minutes. The Bobotie is ready when the topping is golden brown. It should be firmly set on top. Remove it from the oven. Let it rest for 5 minutes before serving.

- 🥩 500g beef mince (you can also use lamb)
- 🧅 1 large onion, diced
- 🧄 2 garlic cloves, minced
- 🌶️ 2 tbsp mild curry powder (key for flavor)
- 🟡 1 tsp ground turmeric
- 🍯 2 tbsp fruit chutney (apricot or mango is best)
- 🍑 50g dried apricots, chopped
- 🍞 2 slices white bread
- 🥛 250ml milk, plus extra for soaking
- 🥚 2 large eggs
- 🍃 2 bay leaves for garnish
- ⚫⚪ Salt & pepper to taste
- 🛢️ Ghee or oil for frying
