Description
Kenya’s iconic social feast! Nyama Choma (grilled meat) is the star of celebrations—marinated in ginger, garlic, and spices, then charred to crispy perfection over charcoal. Its smoky aroma and tender interior make it a communal experience. Served with Kachumbari (spicy tomato-onion salad) and Ugali, it embodies East African hospitality.

Instructions
- Prepare marinade: Combine minced garlic, grated ginger, lemon juice, paprika, cumin, salt, pepper, and oil in a bowl.
- Rinse meat, pat dry with paper towels, and cut into even pieces.
- Massage marinade into meat until fully coated. Cover and refrigerate for ≥2 hours (best overnight).
- Grilling: - Charcoal grill: Cook over medium-hot coals until charred outside and cooked through (~15 mins/side). - Oven: Broil on high rack 5-7 mins/side. - Pan: Sear in oiled skillet over high heat.
- Rest meat 5 minutes before serving with Kachumbari (tomato-onion salad) and Ugali.
- Note: Authentic Nyama Choma uses charcoal grilling for smoky flavor. Adjust doneness to preference.
