Description
This is a recipe for legendary Jollof rice. It is a famous West African dish. The secret is in the rich tomato and pepper base. This base is called the "obey." It gives the rice its deep red color. It also adds amazing flavor. We will make it step by step. You will learn to create this iconic meal. Let's get started.

Instructions
- Make the Obey (Base)- First, you need to make the obey. This is the heart of your Jollof. Take your tomatoes and red bell pepper. Add half of the chopped onion. Put in the scotch bonnet peppers too. Put everything into a blender. Blend it until it is completely smooth. This mix will be your flavor powerhouse.
- Fry the Base - Get a large, heavy pot. A Dutch oven works perfectly. Heat the oil over medium heat. Add the remaining sliced onions. Fry them for about 2 minutes. They should become soft. Now add the tomato paste. Be careful as it might splatter. Fry the paste for 5-7 minutes. Stir it constantly. Watch as it darkens to a deep red color. This step is very important. It removes the raw taste.
- Combine & Cook the Sauce - Slowly pour your blended pepper mix into the pot. Stir it well to combine with the paste. Now add the dried thyme and bay leaves. Add salt to your taste. Let this mixture cook for 20-25 minutes. Stir it only occasionally. You will see it reduce and thicken. The oil will eventually separate. It will float to the top. This means your obey is ready. It should be deep and fragrant.
- Add the Rice - Pour the chicken stock into the pot. Add 2 cups of water as well. Turn the heat to high. Bring the liquid to a rolling boil. While it heats, rinse your rice. Rinse it under cold water until the water runs clear. This removes excess starch. Stir the rinsed rice into the boiling pot. Make sure it is evenly coated.
- Simmer to Perfection - This is the crucial step. Reduce the heat to the lowest setting. Cover the pot very tightly. First, place a sheet of foil over the pot. Then put the lid on top. This traps all the steam inside. Let the Jollof cook for 30 minutes. Do not open the lid. The rice will steam to perfection.
- Finish and Serve - After 30 minutes, check the rice. It should be tender and fluffy. Gently fluff it with a fork. Want that authentic smoky taste? Here is a trick. Place the pot on a different, very hot burner for 1-2 minutes. This will slightly char the bottom. It adds a wonderful smokiness. Serve your legendary Jollof rice hot. Garnish it with the cooked chicken, if using.

- 🍅 4-5 medium plum tomatoes, roughly chopped
- 🫑 1 large red bell pepper, roughly chopped
- 🧅 1 medium red onion, roughly chopped
- 🌶️ 2-3 scotch bonnet peppers (adjust for your heat preference)
- 🥫 ½ cup tomato paste
- 🍲 1 cup chicken or vegetable stock
- 🌿 2 tsp dried thyme
- 🍃 2 bay leaves
- 🛢️ ½ cup groundnut oil or vegetable oil
- 🍗 4 chicken thighs, seasoned & pre-cooked (optional, for serving)
- ⚪ Salt to taste
