Description

Instructions
- Marinate fish: Toss cubes with lime juice, palm oil, paprika, cumin, garlic powder, salt, and pepper. Rest 15 mins.
- Prep leaves: Rinse banana leaves; pat dry. If using foil, cut 30x30cm sheets.
- Wrap: Place fish in leaf centers. Fold edges inward, securing with kitchen twine/toothpicks.
- Grill: Cook parcels on medium heat (200°C/400°F) for 20-25 mins, turning once.
- Serve: Open carefully (hot steam!). Enjoy with coconut rice or fresh salad.
🌿 Why banana leaves?
Beyond eco-friendly packaging, they impart a grassy sweetness unachievable with foil. Find them frozen at Asian/African markets.
🔥 Grill Alternatives:
-
Oven: Bake at 200°C (400°F) on a tray
-
Stovetop: Sear parcels in a hot, oiled pan (cover to steam)
💡 Flavor Boosters (as in original Tipp):
-
Add 1 tsp grated ginger or 2 tbsp chopped cilantro to marinade
-
Brush leaves with oil before wrapping to prevent sticking
Serving Tradition: In Swahili culture, opening the leaf parcel at the table releases an irresistible aroma – part of the experience!
