Description
Zanzibar’s creamy coastal delight! Tender fish fillets (like tilapia) are pan-seared then simmered in a luscious sauce of coconut milk, tomatoes, ginger, and turmeric. This quick Swahili classic balances richness with bright spices – perfect over rice or chapati.

Instructions
- Pat fish dry. Season with salt, pepper, and ½ tsp turmeric.
- Heat oil in a pan. Sear fish 3-4 mins per side until golden. Set aside.
- Sauté onions until soft (3 mins). Add garlic and ginger; cook 1 min.
- Stir in tomatoes. Cook 5 mins until saucy. Add water if dry.
- Pour in coconut milk and add paprika + remaining turmeric. Simmer 5 mins.
- Gently return fish to pan. Spoon sauce over fillets.
- Cover and simmer 10 mins on low heat.
- Serve hot with rice or flatbread.
