Description
A fragrant East African celebration dish! Pilau features basmati rice simmered with meat, toasted spices (cinnamon, cardamom, cumin), and caramelized onions. Its golden hue comes from turmeric and broth infusion. Traditionally served at weddings and holidays, this one-pot wonder embodies Swahili coastal flavors.

Instructions
- Rinse rice until water runs clear. Drain and set aside.
- Pat dry meat cubes. Skip if using pre-cooked meat.
- Heat oil in a large pot. Brown meat in batches (5 mins). Set aside.
- Sauté onions until golden (5 mins). Add garlic and ginger; cook 1 minute.
- Toast spices (coriander, cumin, cardamom, cinnamon, cloves) for 1-2 minutes until fragrant.
- Return meat to pot. Add rice; stir to coat with spices.
- Pour in broth/water. Season with salt. Bring to a boil.
- Cover, reduce heat to low, and simmer 25-30 mins. Do not open lid.
- Remove from heat. Rest covered 10 mins. Fluff with fork.
- Garnish with fresh cilantro. Serve with grilled meat or salad.

- 1 tsp cardamom pods
- 1 cinnamon stick
- 3 cloves
- 4 cups water or broth
- 3 tbsp vegetable oil
- Salt to taste
