Description
A vibrant Kenyan staple! Literally meaning "stretch the week", Sukuma Wiki is a nutrient-rich greens dish that offers affordable, everyday nourishment. Lightly braised with tomatoes, onions, and paprika, it’s fresh, simple, and full of flavor. Traditionally paired with Ugali (maize porridge), it transforms kale or spinach into a fragrant, comforting side.

Instructions
- Prepare the greens: If using kale, remove thick stems for faster cooking. Spinach requires no prep. Wash greens thoroughly in cold water to remove dirt. Drain and chop coarsely/finely as preferred.
- Dice tomatoes (use ripe ones for sweetness). Peel and finely chop the onion.
- Heat oil in a large deep pan or wok over medium heat.
- Sauté onions in hot oil for 3-5 minutes until translucent. Add garlic and cook for 1 minute until fragrant (avoid browning).
- Add tomatoes, paprika, salt, pepper, and optional chili. Simmer for 5 minutes until tomatoes soften. Add 1-2 tbsp water if too dry.
- Add chopped greens. Stir gently to coat with tomato mixture (greens will shrink significantly).
- Cover and simmer on low heat for 10-15 minutes. Stir occasionally to prevent sticking. Greens should remain vibrant but tender.
- Adjust seasoning. Optional: Add lemon juice before serving.
- Serve hot with Ugali (maize porridge), rice, or flatbread.
